"free" soup (pointless soup, 0 point soup)
This is easy to fix and very filling. It’s the 0 point soup that I used from Day 1 on Weight Watchers. A great choice to have available every day to satisfy your hunger without adding lots of calories you don’t want. Don’t stress about following the recipe; add whatever vegetables you have.

Start this in the morning and cook on low until you’re ready to eat.

Place all the ingredients in a slow cooker.

1 1/3 cup sliced carrot

1 cup diced onion

4 garlic cloves, minced

6 cups fat-free broth (beef, chicken or vegetable)

1 can green beans
-
1 cup diced zucchini
-
half a cabbage, or however much you can fit in

2 Tbsp tomato paste

1 tsp basil
-
1/2 tsp oregano
-
1/2 tsp salt
-
water (you can decrease the broth and add water instead or add additional water towards the end to achieve the consistency you desire)

Notes: I often chop the ingredients for this soup as I’m fixing another meal. I bag up the chopped vegetables and it’s easy to dump everything in the slow cooker the next morning, turn it on and go.

I’ve also used fresh green beans, Chinese cabbage, more or less of an ingredient and various spices. This is definitely a “what’s in your refrigerator” meal.

Other Suggestions

Using your basic recipe, I would omit the tomato paste and herbs. Add lemon or lime juice, sweet chili paste and patis (fish sauce) to taste. It puts a whole new twist on soup. Cilantro, green onions, and anything you like can also be added. (Traditionally Lemon grass stems are also added, but that is more of a hassle and it’s fine without!) Enjoy! [Suzy S.]
